I'm receiving my Koyo in the mail tomorrow, and I'm buying one gallon of Toyota red, then the rest is going to be water. But I've heard that it needs to be distilled water, is this true? If so, I'm going to pick up about two gallons from the local grocery store.

Distilled water is best, but I think most people just use tap water.

also get new hoses, clamps, thermostat (if not already replaced), and thermostat housing gasket.

no, just the gasket...unless your housing is broken or someway damaged.
