I know that the factory size for these are 205/50/16. But if I wanted to get a slightly beefier looking tire, would 205/55/16 be fine? I also bet that these would improve road quality a little bit.

honestly, I've just recently put my gt-s wheels on w/ 205-50-16 and the ride quality actually feels better than my stock wheels w/ 205-55-15. So I don't think you need a "beefier" tire size, it'll just take away from the look of the wheels. You should be fine with the factory size or even a little lower if you wanted to.
