Now I admit that I'm on a 4 hour delayed grounded flight back home, but maybe this is possible.

What if u got a bunch of carbon fiber, got all the stitchings exactly right. Could u use it as an alternative to canvas?

Ok the carbon fiber we are used to is woven fibers covered in resin for hardness.... TECHNICALLY carbon fiber is very very very pliable. Its when you put the resin on top that it hardens. BUT that being said.... Carbon fiber would NEVER be waterproof. It would leak like a mesh bag. You could put a vinyl or something top under the carbon fiber but that persists 2 problems....

1.) all you are doing is tossing a layer of carbon fiber on top of your existing top...
2.) it would hold the water sooooooooo bad between its fibers that if you put the top down wet it would mildew.

Now all that being said... I think it would be extreemly possible for people with hard top verts like lexus cars and such but celica verts its not really an option.
