Going to replace my
-tranmission fluid, new filter at the same time?
-clutch fluid
-engine oil doesn't need to be done yet
-radiator was done a while ago
any others I should think about doing brake, power steering?? (remember this is a japanese car)

recommendations on what brand and grade fluids I should be using?

For brake fluid I use Valvoline Dot-3 full synthetic. I need to do my clutch fluid soon as well, and I'll be using the same fluid.
