Im sure this has been covered, but I cant find any threads on it. Basically, I was just wondering how much work / modification is required to throw a 5sfe into an ST, simply because of my circumstances if I find a decent ST shell then that will be my only option... Are there major differences between the ST and GT that make this complicated?

since you have a GT (wrecked) you can easily swap over the 5s/tranny to the ST shell. You would need the 5s/tranny/axles/mounts/brackets/b pipe and the wire harness/ecu from the GT and bolt all that into the ST shell. The only thing is the pass side GT mount bolts to the ST chassis differently than the GT, so you need to drill 2 new holes for the bracket.

the only other issue I see is that your GT is a 95 (OBD I) and any shell 96+ is OBD II which means that getting the car inspected will possibly be bad. Look into your state's inpection laws for more details.
