Say I wanna find the top speed in my ST. It's an automatic, so I don't have as many options for some things.. but after I'm in the highest 'gear', how high should I let the RPM's get before I slow down? Should I let it get so close as to redline, or 6000? Or something lower?

If you actually get to that point without getting pulled over, your car won't go to 6000 rpm's in OD, which is your final gear in your automatic st. You could just forget the guesswork and experimentation and search for other threads that deal with stating the top speed of your car. Should be around 110-125, depending on year.
