So I've been thinking about getting a quick release kit but I don't know what information do I need to make sure it's compatible with my 97 Celica GT? What do they mean by bolt patter and holes?

Celica adapter -> quick release -> steering wheel.




Why do you want one? No need unless you have a cage.

Just for anti-theft and give it more of a better look than the stock one. The 7th gen steering wheel looks nice. I might try getting one since it'll be cheaper but I'm not good with wires. I wander if it's plug and play or is there some cut and soldering to do.
