After disassembling the parking brake, and beginning to reinstall new shoes and hardware, I cannot slide in the rear shoe between the shoe holddown spring cup and the backing plate.
The diagram shows you squeezing the spring by hand but I just can't seem to do it that way.
Can I get some suggestions, my car is sitting up on Jack right now so it would help very much

You have to remove the pin that holds that the spring holds in place. Just wiggle it out of the back of the plate, slide the shoes in, and reinstall the pins. Put your finger around the back of the plate to hold the pin in place while you install the spring and its retaining cup. The spring tension is pretty light, and a 90 degree twist of the cup will lock it in place. If you can't install them, remove all the loose bits, and drive it to a shop.
