Like the topic says, anyone whose swapped in an st185 3sgte, do you
still have in your stock dash. I know the 3sgte is meant to go to higher
RPMs, so is it alright to use the stock gauges?

It should be OK to use the stock dash but just remember that the 3s revs to 7300. Anyone correct me if im wrong on this.

I think you mean gauges/cluster/combination meter/etc. Yes, you can still use the stock one. I believe the ST205 3S redlines at 7200. I have the ST205 cluster on my AT200(ST Celica) and I haven't had a problem...

I am unsure of this, which I have been meaning to bring it up with tweak, I know with my v6 swap with that ECU my Tach wont read right because it reads in a different OHM level then the stock celica's, I also heard this to be true about the ST185 Swaps.

your stock gauge cluster will work totally fine. the only difference is that now you can rev to 7300rpm. the stock rpm gauge does this fine, but you just have to remember that its ok to go into the red zone on the cluster. i always forget that i can do this, and end up shifting early sometimes..lol

Peak Hp/Tq are normally at two different spots. Peak HP is the one to be concerned with for shifting. Where you shift depends on the powerband AFTER the peak. You don't want to shift right at the peak because you wouldn't be carrying that peak power. If you only lose 15-20 HP over the next 1000 RPM over peak, why shift at peak just to drop BELOW what you could have carried for anothe 1000 rpm??

I.E. You want to shift just before a LARGE power drop off. If your car peaks at 6000 and the powerband takes a SERIOUS nose dive immediately following the peak, then shift at peak. Otherwise, if it's just a negligible drop, shift above peak power just before the power really drops off.
