How much brake fluid does the system hold, and how much for other things in it (master brake cylinder, resivoir etc)

IIRC it should be almost a quart, can someone confirm?

A quart should be plenty to flush the old fluid out. The system probably holds somewhat less than a quart, but the exact amount depends on how much the disc brakes are worn. As the brakes wear, the calipers hold more fluid.
