I want to pull off my valve cover and header. My friend told me that I will have to get a new gasket set after I do because I will break them, will I really break them no matter what if I take it off to paint it?

exhaust manifold gasket, no. why would u paint stock exhaust manifold? (it will just chip off even with high heat paint)

valve cover, yes, the gasket will not seal properly anymore, new gasket set is like 25$ from the dealer
