It's possible I may have messed up my tune somehow although I can't figure out how but let's just say I did...

Anyway, my question is, is there a bypass option on the SAFC II that would allow me to run the ecu without any tuning input?

If not, how do I check my tune to see if there is an error?

Is there a log of changes that the SAFC II keeps?

Yes, there should be a wire (or two) which are spliced,not tapped. Join the stock wires back together and cut the splice out. Then it will only monitor and make no changes.
